What does "chay" on a sign mean?

Meat-free, in the Buddhist sense. A "quán chay" uses no meat, no fish, no eggs, no dairy and no fish sauce, which makes the food vegan by Western standards even though the word "vegan" will not appear anywhere. Learn to spot the word "chay" — it is far more reliable than any English signage, and showing it written down gets you understood when nothing else does.

How do I order if nobody speaks English?

Say "tôi ăn chay" — "I eat vegetarian". It works in ordinary restaurants too: most have something meat-free, because many Vietnamese eat this way on certain days of the lunar month. The other phrase worth memorising is "không nước mắm" — "no fish sauce". Fish sauce goes into almost everything here, vegetable dishes included, and you cannot tell by looking.

Why is the place packed on some days and quiet on others?

On the first and the fifteenth day of each lunar month — "mùng một" and "ngày rằm" — a large share of the city eats meat-free, whether or not they are vegetarian the rest of the time. Vegetarian kitchens are crowded on those two days and the choice is at its widest; ordinary restaurants put out a separate meat-free menu. Come on another day for a quiet meal, or on those days to see how it actually works.

Why are there no prices or menus in the listings?
